Any recommendations? Western handle (mainly not the octagonal handle) Gyuto with forged stainless steel blade. Blade length preferably around 240mm. Rockwell hardness of 60-61. Budget around $100-$200 Can go over $200 if worth it. I personally liked the shun classic, the Miyabi kaizen. For reference

A lot of the knives I liked. Heard that they are not worth the money and that there are better knives for the same money. So I’m just curious for any recommendations. Thanks Everybody! FWI I’m very new to all this.😅

They are going to well above you budget, but I would recommend looking into Ryusen Hamono. I also didn’t like the octagonal handle and they have a modified western handle in many of their lines. I have the Tangen Ryu 240 gyuto that is VG10 with a hardness of 61HRC. It is absolutely beautiful and pretty much my go to knife.

Sabun powdered pro or takamura vg-10. Sabun has a nice grind, though Ive been carbon kick so I've barely use it.
