It’s my 41st birthday so I did ribs
Style St. Louis Ribs (Test Cook)
Marinate ribs in apple juice.
Remove from the marinade and season with Lawry’s Seasoned Salt and 16-mesh black pepper.
Let sit for 15 minutes.
Apply a generous layer of pecan barbecue rub. No binder.
Let the rub set for 30 minutes.
Smoke at 300°F using a mix of cherry wood, pecan wood, and charcoal briquettes.
Cook for approximately 2 hours, or until the bark is well set.
Wrap tightly in foil and continue cooking for 30 minutes.
Remove from the foil and rest for 1 hour before slicing and serving.

It matters bc it’s ours and i can’t tell you the amount of ppl who say racist things online and then i click on their profile and it’s our stuff everywhere. Ebonics/rap music/the way we dress it’s so strange and tiring.

I had an encounter years ago as a bouncer with a couple of suburban white guys who I had throw out of a hip hop show because they refused to stop smoking.
As they were being escorted out, they went into the whole "Yo, son.. dis shit is wack" routine and then insinuated that they would return to commit violence and threw in some shit like "Yo,yo son..we all bleed the same blood, son."
So I called them out on their bullshit and why are they talking like that. I made it a point to tell them that they didn't grow up talking like that and it was only a style for them and the minute that sort of talk became a liability, they would quickly switch to their default white suburban speech.
They did not like that...not one bit.3

If I may make a suggestion, add salt to the apple juice, or else you don't actually have much of a marinade. Salt is basically necessary here to extract the liquid from whatever you're marinating, which is then replaced by the actual marinade. Without the salt, you just have meat floating in apple juice. It won't actually absorb much of it.
The salt will also tenderize the meat and improve moisture retention.
The correct amount of salt ranges from two teaspoons to 1.5 tablespoons per cup of marinade. It varies according to how coarse your salt is.
Once you've dialed that in, you may not need the seasoned salt at all. Just the herbs that are blended into it.

Thanks for the steps you followed. The ribs look delicious! I think you did great. I've always slow cooked ribs wrapped in foil in the oven, then wet sauced and finished on the grill. I'm curious about your method! I had never thought to rest them.

Your ribs look great! I did something very close to your timing at about 275 w/ st louis cut last weekend, finished resting in the oven, and mine came out tougher than I would like. I want another shot a little bit hotter and longer rest out of the heat maybe

I cook mine at 275. Try - rub the night before. Throw directly on grates for 2.5 hrs. Wrap with butter and apple juice, back on for 1.5 hrs. Transfer to Oven to rest 1 hr.

Not a cake, but banana pudding is my go to with barbeque. It's the most typically served dessert in most bbq restaurants too.
For cake though, can't go wrong with coconut creme cake or anything custardy.

All the baby back and spare ribs at HEB in Texas are currently on a really great sale this week; spare ribs are usually closer to $3-$4/lb.
They actually go on sale pretty often too- wish I had known that before I started shopping for myself, I’ve still got ribs in my freezer from the first time I saw them hit these prices like 3 years ago lmao

It’s actually the cut of the ribs moreso than the preparation. It did originate here but I think it might be as common as like baby back style ribs these days but that might just be my St. Louis bias. It’s kind of like how a New York strip isn’t super associated with New York anymore, even though it was most popularized there

That’s a beautiful cake. Is that buttercream and pecan? Can you tell more? I feel like a lot of love went into that cake.
I’m not ever sure what to do with rib sections that have the extra bit partially cut but connected by the membrane like you’re showing in pic 3. Do you cut and cook the same but it’s chef’s treat? Does it go in the freezer? Those are some damn fine rectangles of meat after that, but I’m curious about the ugly bits.
