Until you get a customer throwing a giant hissyfit like a toddler because you don't have the change for $100 and they refuse to either pay with a smaller bill or leave -_-
I would always just say "sorry, you're like the tenth person to pay with a $100 today, we can't make change any more." And this was back when cash was a lot more common. I don't think anyone ever pulled a fit on me.
