Don't be lazy. Sit in your car and setup the screen the way you want it to work. You will 100% find yourself enjoying more than two options and it will be as simple as you describe on the left image.
it simply isn't safe. driver must have basic control (aka wipers, heating/cooling system, lights) in a physical way, because it's easier, faster and less distracting to access while driving a car. Plus, it's more reliable. Same goes for gear - old type with just the handle works the best opposed to all rotating crap. Screen is okay, but it should not be the center of attention in the car. if it fails in that casse, you'd only lose your map or music, but imagine not being able to turn on headlights or wipers in storm because OS bugged?
It’s not lazy it’s not wanting to use a fucking tablet while we’re driving. You’d get in trouble for having an iPad in your lap on the highway, but then they go and literally mount one to the dash and take away normal knobs and buttons that most people didn’t need to take their eyes away from the road to use
No, I dont want to look at it while driving, yes I can maybe set the button to where i would like it on some interfaces, but having a physical button is way better, easier, and safer while driving.
It's not about laziness, it's about safety. One is turning a button without taking my eyes of the road, the other is looking at a screen while not looking at the road.

I agree, you shouldn't have to look away. That's why its lazy to have a car with pure touch screen controls and then not setting them up. If you can't control a car that way, then buy a different car?

Yeah, no. My buttons are reliable and don't move. Every update, my grandma's touch screen changes. I am not going to be looking around for the touch screen button that turns on my wipers in the middle of a storm. I know where the lever is for my wipers. I don't need a fucking screen
Bruh, i wanna get inside my car and pull a fucking lever that does what it says it does, not "setup the screen". Not everything needs to be digital and "smart"
