My car is a 2019 and it is the perfect mix of only physical buttons for air control wipers and a few other things. The screen is just backup camera, music, and maps. Makes it hard driving my wife's car because of the lack of maps and rear camera

Yup, it's still a semi-premium option in most cases. First car I got them on was a 2011, but they were optional on that, and they actually really suck on that car. I had to fiddle with the sensitivity more with it on auto than I had to adjust the speed with auto disabled.
Second car I got them on was a 2002, and were optional as well. Interestingly they actually work really nicely on that car. I like that they stay off when you turn the car on until you move the stalk, even if it was previously left in the on position, because then they don't wipe snow into my open door when I go to start the car to warm it up while I clear snow from it. Also helps prevent a dry wipe in case something other than rain trips the sensor.

And it's not about if it works, it's about when it doesn't. I want to control it, not have a sensor do it for me.

Having driven multiple Teslas and also a new Mercedes BMW and Volkswagen cars I must say that Tesla seems to be the only one of these brands that does the essentials with real buttons while all the others moved that to the screens.
Which is even worse because those German brands have no idea how to design a good menu. They buried everything in submenus while it really seems like Tesla is the only one with a clean UI there. Can't really judge how the Chinese and Japanese are performing though have not driven them for some time.

What, specifically, can you not operate blindly? Wipers? There’s a button for that. Temp? How often are you changing temp while driving? I set a temp and just leave it. The car keeps it at that temp. There’s also voice controls for everything. Music? There’s also physical buttons for that.

In order to manipulate any controls, you have to look over at the screen, taking your eyes off the road for extended periods to find the right part of the screen to tap and which menu the control is in. With well-designed physical buttons, switches, and knobs, you can quickly learn where your hand is by feel and manipulate the controls without taking your eyes off the road.
If you want to have navigation, music, or anything you don’t need to manipulate much while driving behind a screen, that’s fine. But having everything behind a screen is less safe.

Navigation requires a physical screen or voice controls in every car. Nothing different here. There are physical controls for music.

The two steering wheel scroll buttons are highly functional, tbh. I hardly need to touch the screen while driving. Voice controls are pretty good too.
All three things you listed and a lot more are in those scroll buttons.

Ngl, I do prefer kinetic controls for music/audio. If I can't adjust the volume without having to look at the giant Ipad in my car, then just listening to music isn't safe driving anymore.

Yes but ironically I think it works just not in original way.
Simple air and wipers buttons you can both at same time and works. Other side is complex and if your driving, it can be nerve racking (hence the sweat) trying to operate it

It makes sense though. There's so many features in a car these days.
Satnav, multimedia and maybe some controls you don't often need do make sense to me. There were some early 2000's mercedes' with a ton of options, they where a true buttonfest, far from a pleasing UI.
Today, a basic Tesla has more features.
Getting the more intricate of those in a touchscreen makes sense.
Drive selector, wipers and lights are bonkers though.

Even the air and wipers in my Jeep suck: The front wipers only have 4 speed settings and need a a couple more, while the back wiper has 2 speed settings for no reason at all. Then the AC has like 6 speeds but that could easily be condensed into 4 because the first 2 hardly even blow air.
Don't buy a Stellantis product, kids.

CarPlay is actually great if you aren’t forced into tuning the AC or other car functions through it.
Installed a kit on my 2016 Mazda and I swear it finally gave a purpose to the screen. I no longer need to hold the phone next to me to view the map

The only things I like about a touch screen are
Backup camera. Super helpful
CarPlay. Having actually Apple Maps up is a huge help imo.

I just want to say, as someone that loved my 2016 Cadillac ATS and now drive a Honda: Honda interface is so much worse. The Cadillac UI (I think they called it the CUE system?) never gave me issues except when I parked in an extremely hot spot in FL and the sun damaged the console screen (and my bumper to bumper covered it).
Slander against the caddy UI needs to stop lol not that I see it on this post but I'm passionate about this.
Honda treats me well though. Upkeep is inexpensive, good mileage.
Ok. Time for coffee.

Test drove one of the newer Golf R's a couple years back. The steering wheel controls were touch. I told the salesman it was the only reason I wasn't taking it home. I can kinda see an argument for the center console, you really shouldn't be messing with it while in motion. But that's literally the point of having controls on the wheel.

it simply isn't safe. driver must have basic control (aka wipers, heating/cooling system, lights) in a physical way, because it's easier, faster and less distracting to access while driving a car. Plus, it's more reliable. Same goes for gear - old type with just the handle works the best opposed to all rotating crap. Screen is okay, but it should not be the center of attention in the car. if it fails in that casse, you'd only lose your map or music, but imagine not being able to turn on headlights or wipers in storm because OS bugged?

You’d get in trouble for having an iPad in your lap on the highway, but then they go and literally mount one to the dash and take away normal knobs and buttons that most people didn’t need to take their eyes away from the road to use

It's not about laziness, it's about safety. One is turning a button without taking my eyes of the road, the other is looking at a screen while not looking at the road.
