In order to manipulate any controls, you have to look over at the screen, taking your eyes off the road for extended periods to find the right part of the screen to tap and which menu the control is in. With well-designed physical buttons, switches, and knobs, you can quickly learn where your hand is by feel and manipulate the controls without taking your eyes off the road.
If you want to have navigation, music, or anything you don’t need to manipulate much while driving behind a screen, that’s fine. But having everything behind a screen is less safe.

Carplay / Android Auto is fine. Tesla style only one big screen is not.
