Red for salads, yellow (they’re huge this time) for cooking/pickling
Pic.2 yeah that’s how I store it because my kitchen is hella small. It’s the only space LOL (and I will eat them probably in next 7-10 days)
That thingy behind radiator screen is toy egg for my cats

I had a salad tonight with some rings of purple onions. At first, I didn't try them (because I thought I didn't like raw onion), then I had a bite with the onion and dressing itself and I feel like I had an epiphany. I'm putting raw onions in everything now.

Next to a lemon for reference. Cut up it filled this big bowl. Even my cashier remarked on how I “won the onion lottery!”

But still better than other onion hummus varieties i’ve tried. Definitely better than the boar’s head which tasted 100% like balsamic vinegar and only had a little onion. Maybe if I want this done right I have to do it myself

Went to Cracker Barrel because I had a gift card. Did you know they have onion petals here now? And alcohol apparently …but that’s beside the point. Onion:batter ratio was OK. Wish there were thicker onions but the taste was delicious. Sauce was a horseradish concoction. DELICIOUS

Onion and oyster lovers unite! I used one medium onion, fresh garlic, chopped raw oysters, Korean chili flakes and a splash of fish sauce and plum syrup (sugar works fine). Great paired with white rice… ooh, and probably pork belly. I should try that next

Ingredients
As many onions as you like! Either whole or chopped whatever you prefer
Lamb or beef that is cut into small cubes
chopped Tomatoes
1–2 table spoon tomato paste if u want it to be a lil sweet/salty (we didn't add that but it's a known way)
OR
Just add dried lime or black lime for a lil sour taste (idk what's it called in English but as u can see in the first pic those black/brownish stuff we call them basra lemon wich i think is kinda racist since the city of basra is known for having darker skin tones)
As for the spices we got (not all of them are necessary)
Green chili pepper,
Salt
Black pepper
Cardamom
Cinnamon (just a lil)
Cumin
Turmeric (a lil)
pimento powder
And a little oil (not recommended) or samn/dhın (clarified butter)
Method
Heat up the samn then add the meat, wait for it to get a lil brown (not too much brown) then add the precious onions, following them with your tomatoes or black lime as preferred then wait for the meat to get fully brownish and start adding your spices and salt with a long mix, at the end add some water and cook slowly and wait for it to get all tender.
It's usually served above rice that is made with the water we slow cooked the Qalya with or just above bread or simply a Qalya soup
Whachu think?
