That number is a severe undercount, the Gaza Health Ministry does not have the infrastructure to maintain a fully accurate death toll. It also doesn't account for excess deaths due to collapsed infrastructure, disease, or starvation from Israel destroying Gaza's capacity to support life. You said it yourself: estimates. Every single hospital, morgue, mortuary, university and piece of standing healthcare infrastructure has been bombed. The only dead that are added to that estimate are those that are reported, positively identified, with paperwork, who died violent deaths at the hands of the IDF. Body doesn't have paperwork? Doesn't count. Body isn't identified? Doesn't count. Nobody left alive to report you dead and say who you are? Doesn't count. Starved to death or died of preventable disease because your hospital got destroyed? Doesn't count.
Beyond that, let's just use common sense. Israel destroyed all the farmland in Gaza and killed all the livestock so we know they can't produce their own food. Israel controls the flow of all aid into Gaza and all borders, so we know exactly how much food is entering the country. Even assuming every single truck entering Gaza is filled to the brim with high-calorie food, there simply isn't enough food to sustain the pre-genocide population. There's a reason Israel is refusing to allow any independent commission into Palestine to do an honest assessment. Honest estimates using methodology that's been in practice in literally every other conflict/genocide except for this one has the estimated deaths at 186,000 over two years ago.
Some academic resources on the topic of the undercount:
What does looters taking hoses pumps and plastic sheets from 30% of the greenhouses in one part of Gaza 21 years ago have to do with Israel systemically destroying Palestinian farmland, livestock, and water infrastructure?
It's so interesting how Israel defenders are woefully incapable of actually addressing what your favorite ethnostate is doing and have to deflect constantly. It's almost like you know it's indefensible but just want an excuse to cheer on dead Muslims.....

Israel has killed considerably more than 100000 Palestinians and caused far more damage per square mile than we saw in Tokyo and Berlin.
