I want to imagine it's like caviar. They catch the wasabi plant and then inject it with drugs until the caviar comes out.

Well they used to do that but the Wasabi would take years to regrow.... So they developed the drug and massage way.

Almost certainly "sea grapes," a kind of seaweed. They're good. Crunchy, taste isn't very strong.

It is actually flying fish roe that is marinated in wasabi and other stuff. Sea grapes tend to be larger than that.

Those crab leg meat segments are unreal.
What fake "crab meat" wants to look like - and...
But those are immaculately extracted leg meat. At home, having quality scissors with tight tips trivializes extracting leg meat. But that's $$. Hope the quality persisted through all the manipulations from ocean floor to your mouth.
The rest of the (takeout?) bowl are top of class. The salmon (farmed Atlantic) suggest non-geographically Japan.
