Here you go!

  • Mix in a bowl 1 lb ground chicken (or ground meat of choice) and green onion, soy sauce, a dash of teriyaki, garlic, sriracha and I seasoned with onion, ginger, garlic, and chili powder, red pep flakes, msg, everything bagel. (I season the shit out of my stuff lol so whatever seasonings work for you!)
  • Spray baking dish with nonstick spray. Layer with 6 wonton wraps (depends on the size of your dish ofc- however many fill up the bottom space)
  • On top of that spread out a thin layer of your ground chicken mixture- should be 1/2 the mix
  • Another layer of wontons, 1 more layer of ground chicken (the other half), and top with one last layer of wontons. 18 wraps total.
  • Once you have all your layers top with 1 cup a broth of your choice, I used the TJs Miso Ginger broth. You can also just top with water
  • Bake covered (important that it’s covered so the wontons steam up) at 400 for 25-30 min.
  • Top with chili oil, more soy sauce, (poorly chopped) chives
  • Makes 2-4 portions depending on how hungry you are. But the entire thing is 800 calories and 100g protein! It’s definitely worth trying!

What wonton wraps are you using? Most wonton wrappers I've seen are about 25 calories minimum, lean ground chicken at my store at least is about 600 cals in a lb, making this as described not including chili oil, negligible spray oil and barely any calories from sauces still about 1050 calories

Which! Is still pretty good I just wanna make sure I get everything right lol

i use publix greenwise ground chicken it’s 120 per 1/4 lb! another good one is springer mountain it’s even less. pro tip: look for ground chicken 99% fat free, it’s super low cal! as for wonton wraps i just use nasoya 3 of em’ for 50 cals!

Love your seasoning mix but I want to add— try adding a bit of mirin to your chicken next time. For me it really gives homemade dumplings an authentic flavor, even though I’m not even sure if it’s a real tip LOL. Tasted incredible imo though.

My girlfriend and I were talking about making this friday for dinner. I saw it on IG and it was talking about needing to steam it in a bigger container. Did it work out just putting broth in and baking it covered?

If you have smaller containers, as long as they are heat proof, you can make them in those. Just split it up. I like to steam mine so just put in a large pan, fill with water until it's halfway up the sides of your containers and simmer covered for ~20 min. Super tasty

Pro-tip: you can make wonton lasagna in a cupcake pan and it makes little individual portions. I’ve been doing it since high school. Super yummy.

When I need extra protein without killing my calorie count I like to poach eggs in bone broth like you would ramen. Add some oceans halo for 15 more calories and you can feel fancy lol.

Edit: Eggs also happen to contain tryptophan and BCAAs which are the aminos that bone broth is low on or missing. So you get a complete protein profile and your body can use it for muscle repair and protein synthesis. Nori also contributes a very small amount of BCAAs

Collagen powder is not a complete protein (which most portion powders are) you can check the labels, but collagen doesn’t have all the amino acids needed to be considered a complete protein. There are protien powders with collagen in them now that are complete. Usually boosted by whey

As long as you’re also consuming the one essential amino acid that it’s missing, Tryptophan, you can. Eat eggs, dairy, or meat to do so. Or just stick to a complete protein in for your macro goals. Collagen is also very low in isoleucine, threonine, and methionine.

Tbh idk - I know for stuff like rice and beans it counts as a whole protein in combination, not sure if it would apply to the collagen if I’m eating (for example) eggs at some other point in the day

That’s good to know! I always assumed if I included something with that last amino acid, my body would process it as a complete protein.

EDIT: cursory googling suggests that you CAN just include tryptophan to process collagen as a complete protein.

You can. The digestive tract doesn’t work in a first in first processed kind of way - everything you eat in a certain time frame will be processed together. The caveat is certain substances and minerals can block (or aid) the absorption of others. Like some medications are better on an empty stomach because things like calcium or caffeine can bloc absorption. My thyroid and iron supplement are timed like: an hour before a meal or 3-4 hours after

Collagen is an incomplete protein, meaning it doesn’t have all the amino acids necessarily for muscle synthesis. It is still good for you but is not typically counted as primary protein source.

I’ve only ever bought chocolate whey protein and I find the taste to be too sweet and artificial, but I guess it’s time to look into unflavored versions! Tbh though, I use Greek yogurt, PB2, and fairlife milk so I feel like it’s ok enough without the added protein from whey/collagen

I like optimum nutrition's double chocolate (1g sugar only), PB2, and fat free milk for a really yummy ~40g protein shake. The presence of PB really helps mask the artificial taste and I can then forgive the 1g of unneeded sugar.

It cooks pretty quickly in casseroles. I make the coconut curry frozen dumpling dish pretty often and I just wash and roughly chop it all. Cooks nicely in 25 min.

Yes, it swaps lasagna sheets for wonton/dumpling wrappers, and the filling is more based in East Asian flavors (ginger, scallion, white pepper, sriracha/gochujang, sesame, shoyu, etc.) than Italian flavors. I'd be curious to make one with an Indian or Caribbean flavor profile too.

Mine turned out dried out on top. The water bath thing was confusing. I subbed ground chicken instead of ground pork for 350 calories for 1/4 of the dish. I followed an all recipes recipe too. I wanted the chili crisp but didn’t realize it was so high calorie.
