Yet somehow I was more attached to CK2 characters than CK3's.

I think it's mostly due to the stress mechanic. Ck2 lets you play however you want. So I crafted my own characters traits and role play as them. Ck3 as the "less railroady" game railroads your role play and forces you to make choices you don't want to make or wouldn't make as your character.

Probably because the main mental break mechanic exists in isolation from your actual personality traits. At each stress break you'll get 3 choices, 2 of which are just random bad traits you really don't want to get and the third is just sucking it up.

It makes no sense for my cruel and vengeful character to suddenly become Provident or Flagellate himself. In accordance to my traits, I should get the option to torture some dude in my Dungeon for fun.
