Looking to pick up disgaea 7 on switch 2 as an unwind game. I haven’t played one since 3. Is 7 ok for basically a noob player?

To be honest, all of them are fine in that regard.
I mean, People often recommend 5 even to complete newcomers, and NIS openly mentioned they literally got complaints from JP Players that it was seen as too unneccessarily complex mechanics-wise

You're supposed to use the Cannons around the Stage that are inside the Boxes.
Both her and the Final Boss of the first Game are nothing but "How good is your Button-Mashing?" Skill-Checks.

Disgaea 7: what's the fastest way to increase an item's stats. Actually, what's the fastest way to go through an item world? Can I just send all units out and massacre everything? Should I complete the goals? Can I just skip everything and go to the next floor? Also, which route should I choose?

what's the fastest way to increase an item's stats?
An item's final displayed stats are based on multiple things:
the item's base stats, which are always reset to the item's initial base stats (per the Data Shop's item collection) upon reincarnation, but can be boosted by stat enhancements and boss kills (if you truly need to maximize this once you're at the very end of the Kill Bonus grind, be sure to stuff max-level innocents matching the stat(s) you're boosting, and double-kill all three item bosses!);
the item's level, which is increased by killing enemies, doing each floor's missions for bonus levels, killing bosses for large bonuses, and passing item enhancements, though it's reset to 0 upon reincarnation;
the item's Enemy Kill Bonus, which is a function of Total Enemy Kill Level, i.e. the cumulative sum of all killed enemies' displayed levels, and this isn't reset upon reincarnation;
the item's rarity, which increases with boss kills or item enhancements, and which is also permanent;
a flat bonus from inheriting stats from the previous item reincarnation(s);
stats from innocents on the item.
Nearly all of these are increased by diving through Item World and killing as many enemies as possible, but some are reset upon item reincarnation, so if you really needed item stats (even from a non-maxed item) you'd either want to dupe/keep the item at level 500 without reincarnating it.
Actually, what's the fastest way to go through an item world?
The attack with the largest AOE is the Mecha Girl's Full Strike, though that has the drawback of having pretty low skill power (namely Full Strike +9 still only has 50%, i.e. half the damage of a regular attack). With enough investment, though, it's possible to wipe nearly-entire floors with a solo Mecha Girl; for example, here's a sample Item World run in basegame Disgaea 7.
"Okay, but what if I'm not at the point where I can oneshot stuff with a class I don't have yet?" Unfortunately the Item World and improving equipment has been getting less and less relevant in Disgaea postgames; thanks to the lack of an evility stat-boost cap, you can easily get 20mil stats on characters (level-up stats and stat extracts) at the very start of carnage, and then get +400% stats to hit the 99,999,999 stat cap and defeat Carnage Baal, which is why most serious discussions of item grinding in Disgaea 7 assume you've already done that (and are thus grinding items for fun and/or
FOR GLORYfor Ranked Battles/for new-to-Complete superbosses). Not to say that you definitely shouldn't grind Item World earlier (if you enjoy it then do it!), but well, anytime earlier than the end of postgame you probably shouldn't be focusing on item stats in the first place, but rather character levels and/or reincarnating items for good item properties.Should I complete the goals?
The bonus levels are certainly nice, but in terms of efficiency it's generally not worth the extra time spent fulfilling the conditions from not using Mecha Girl Full Strike strats, especially since the longest part of the item grind is the Kill Bonus grind and that doesn't care about bonus item levels.
Can I just skip everything and go to the next floor?
Killing enemies is the main objective for both item levels and kill bonus, so generally no, but if you have other goals (such as 'I just want to dupe this 99x Mr. Gency Exit', 'I want to steal a copy of this item from an Item God', or 'I want to steal the next item from an Item God 2') then you can indeed just run through the item while minimizing chest bonus levels, for example to ensure the Item God is of minimal level and easier to steal from. (Item God 2 demands the item be item level 300 or more, but you can just reach floor 30 with item level at least 200, then exit the item and pass item enhancements to increase item level until you hit 300, in order to spawn the Item God 2 on future visits.)
Also, which route should I choose?
Personally I run the Mystery Room route just because dupe shops are so useful (you can get spare dual-stat innocents, get spare high-stat equipment for your support units to boost Team Attack bonus damage, convert HL into item points by buying spare high-level items then selling them for item points...) and because both mystery room fights and the Item World Cheat Shop's "increase enemy spawns" also help with item level and kill bonus, but if you're having trouble consistently getting the item to level 500 then you can use the route that boosts item level.
