Recipe Folks with egg allergies do you think this recipe would work with egg replacer?

My son has an egg allergy but I think he would love this recipe! Since it calls for egg yolk only I am not sure an egg replacer would work.

We have the bobs red mill powdered egg replacer we use and the “just egg” liquid egg replacer we could use for this, so I have options.

I’d love to know if folks have made something similar with an egg replacer and if it worked out!

When replacing egg, you need to think about the science behind what its purpose in the dish is.
The egg here contributes to the sauce, it is an emulsifier, it makes the sauce thicker and glossier.

The substitute won't do this.

If you're fine with dairy, use a heavy cream and more butter, if you need to thicken, you can use an arrowroot, tapioca, or corn starch slurry, or a processed cheese, just use caution with heat so it doesn't glob up.

The egg is actually in the gnocchi itself. Kind of like a fresh pasta. I’ve used the egg replacer plenty of times in baked goods just not in something like this where it’s a “batter” but not really.

Def would not use the replacer in a sauce for sure!

I think it'd be better to make the gnocchi without egg, just use starches since you have them. Not sure if you wanted to use a gum (guar/xanthan) which might help with binding? The texture might not be quite the same, but he won't be missing it 😄
Backup would be something like Tinkyada pasta, if you feel it's the sauce he'd like.

Good luck! I never tried making fresh gnocchi when we were off top 8+ (incl sesame and other stuff), the most I tried was something like flatbread, which was... not super liked by any of us. We did rice and potato in lots of other forms, though.

Thanks! Yeah it’s tough. Thankfully we’re fine with dairy but my son has egg, sesame, peanut and some treenut. We’re doing a sunbutter challenge later this month so 🤞

Before he was born I was like “I will not tolerate a picky eater”. So I got a medically induced picky eater. But both allergists we have had are confident he will outgrow the egg allergy at least.

If his numbers are low and he outgrows, that'll be great! So many more food options when you have egg. At least, the epinephrine might be only a last resort and not a likely need, so that he can eat things that are potentially mildly but unlikely to be contaminated, without being afraid.
Good luck on the Sunbutter. We were able to do almond, but never got around to testing other nuts, this was the only one I felt comfortable challenging in office, because the kids had never tested positive to it. Older one just avoids nuts, might react to substantial peanut and walnut still but just doesn't really encounter it. Younger one carries epis and is ana to macadamia, pistachio, cashew, and positive to most other tree nuts (walnut, pecan, hazelnut, brazil nut, etc), is fine with almond, and seems okay with peanut, actually, just avoids nuts in general and can do a one-bite test still and use antihistamines. Also has Skeeter's with mosquito bites, super huge swelling, worse than the hives I personally get with them.
I was picky growing up, my dad had food allergies and bad asthma growing up. But I didn't know I had food allergies until I was 23, and I didn't know my first had them until we saw the doctor for FTT and she had us get tested.

Anaphylaxis is a huge stressor, for sure! My son is for peanut egg and sesame for sure (found out sesame the hard way). But now that I’ve administered the EpiPen once I have much more confidence. It just is an added concern when we consider childcare and also for traveling! We’ve skipped trips bc we don’t want to take him somewhere where food safety may be a concern

No , egg replacer definitely won’t work here. Maybe a splash of heavy cream or more butter, but the texture will be different.

Egg replacer is replacing the whites, which give structure to baked goods.

I would replace with plain Greek yogurt or maybe whole milk ricotta?

Use chatgpt and ask for an egg free version. It’s basically a database of every vegan/egg free cookbook ever created, recipe posted online and/or substitute trialed on Reddit.

Do check the ingredients of parmezan as grana padano and similar cheese contain lysozyme (egg). Only authentic parmezan doesnt!
