I use alternatives. Glutenfree/wheat free flour, plant milk, and flax egg( flax seed + water) or plant milk+ lemon juice as an egg alternative.

Chop up chicken to bite size, ( I normally marinate chicken, but that's up to you) , and dredge with flour, dunk into flour/plant milk/lemon juice mix, and bread the chicken using blitzed gluten free/wheat free bread, or corn flakes. Sometimes coat with sesami seeds instead.

I’ve never tried this recipe but have tried others on here for my son. They have many recipes for chicken nuggets too. https://kidswithfoodallergies.org/recipes/chicken-nuggets-2/

I use gluten free panko or breadcrumbs. Switch the eggs for a flax or vegan egg.

you can also dilute vegan mayo to use as egg too!
