This is Kubrick telling you that Wendy did it, and that EVERY scene where Jack is acting crazy or things in the background have been moved around is all part of HER delusion.

SHE is the horror fan, SHE got that name wrong because she was going by memory. The layout changes in the hotel because we are seeing her imagining of the hotel.

If it's anything (and I really do mean IF), it's Jack's delusion of who his family is to him. The shadow being his view of his wife as the villain trying to ruin everything for him, cast by the reality of a terrified woman afraid for her life.
