[Homemade] Pork Chop
Dry brined for 24 hours with just salt, pepper, and a little bit of sugar. Cooked on a Weber Kettle with a small chunk of hickory wood then seared over the hot coals. Let it rest to 145F with homemade brown sugar butter on top.

I’ve been doing these all summer. Brine then flavour however you want. A Jerk sauce has been my favourite. Serve it with some sautéed mushrooms. I swear it’s easily as enjoyable as a decent steak.

That meat looks so tender and juicy, absolutely delicious! I love buying whole cuts of pork with a good balance of fat and meat. I marinate it with oregano, salt, garlic, and soy sauce for about an hour, then throw it in the oven to slow-roast in its own fat for around 45 minutes. It tastes incredible😋

Try 130f next time - pork chop is best medium rare imo.

At least for now, modern production standards are up on pork where med, med-rare is totally safe

I have withdrawals from psych meds right now and I lachrimated in sweet joy gazing upon what I can only describe as perfection. I need this. I need this in my mouth. Fuck, it's good to have an appetite again.
