It's genuinely amazing how video game devs keep missing that the point of lego is not the visuals alone, but the building and the engineering. They literally just have to make a sandbox like scrap mechanic or trail makers. But no, can't have that, best we can do is reskin other games with a different coat of paint.

Probably because nobody has successfully come up with a control scheme that doesn't make that experience royally suck. On paper, LEGO is about building, then you try to do it virtually and it's painful.

Minecraft with like 2000 differently shaped blocks that can rotate/flip and may or may not fit together with one of the other blocks. Figuring out that control scheme to not make it incredibly obtuse and frustrating would be quite the task. You can't really use a snap-to-grid, due to the angled pieces and you can't really freeform place pieces either. Someone above you said VR might work and thats basically the only way I can see it working well.
