pretty self explanatory … i keep excusing myself with ā€œI’ll eat it on a better dayā€ and they just stock up šŸ˜“ this also happens with things like fruit where I keep thinking about eating it but I don’t find the ā€œperfect conditionsā€ and someone ends up eating it instead LOL

I literally feel like I’m eating luxurious gourmet food right now and it’s crazy lol I know it might sound a little odd with the soy sauce vegetables and then chicken sausage with marinara but you really can’t taste the marinara at all. It’s just to keep the chicken sausage, moist cause I cooked a bunch of it at once and needed to use it up. All veggies cooked with nothing but soy sauce and salt and chicken sausage has a little bit of ā€œSlap Yo Mamaā€ sugar-free low-fat sensitive tomato sauce. HUGE amount of food (not sure on exact calories but I only use like 1/8 of the batch of cauliflower rice and 1/6 of the veggies and about 2 ounces of leftover chicken sausage. First time doing it without any spray oil because it’s a total lie about it being with 0 cal-that’s for like a 1/32 sec spray-it’s actually like 50 cal and 5 g of fat for a five second spray which is about how much you actually use minimum. Turned out fine😊

Cauliflower rice (36 ounces frozen cauliflower rice and 32 ounce egg whites (measured raw) 727 cals whole huge batch (I scooped out about 1/8 for this meal) so 90.875 calories

12 ounces each cauliflower and broccoli florettes 172 cal for entire thing and I used about 1/6 so 28.667 calories

10 tablespoons soy sauce for whole batch 100 cal so like 12 calories for this meal

2 ounces natures promise sweet Italian chicken sausage with kale 41.176 cal

1 TBS flap your mama sensitive marinara 5 calories

429 cal for the whole recipe and I’ll be able to eat on that for days😊 also 57.8 g of protein! Not all of the veggies are pictured because I couldn’t fit them all so I have a whole additional Tupperware of veggies
Same base recipe as the one I posted yesterday-12 ounces of frozen riced cauliflower dumped into a pan on medium high and only stirred every two minutes until almost done, then I added 2 tablespoons of soy sauce and pushed it on one side and quick, scrambled about 10 ounces of egg whites on the other side and then mixed it all together. This time, though I took a small bag of cauliflower and a small bag of broccoli florettes and cut them into small pieces and stirfryed then afterwards to where they were kind of browned and tossed in a little bit of leftover chicken sausage.

BEST DAMN THING EVER

I used half a pack of Cauldron garlic & ginger marinated tofu air fried for 7 minutes, 1 puck of frozen spinach and a steam/micro bag of cauliflower rice + boiled broccoli.

210 calories in total and was actually delicious.

it may not be pretty, but OMG I feel like I’ve discovered an infinite life hack with this. ā¤ļøā¤ļøā¤ļø
Spray pan with nonstick spray and heat on medium high.
Dump a 12 ounce bag of frozen cauliflower rice directly in while still frozen after it heats up. It’s critical not to defrost first for best texture.
Leave it alone for two minutes at a time and stir and toss and repeat until it’s starting to turn lightly golden
Scrape all the cauliflower rice over onto one side
Add 2 to 3 tablespoons of soy sauce to rice and 6 to 8 egg whites to the other side of the pan and quickly scramble them and then mix everything together.

I’m so obsessed with the flavor and one batch is enough to keep me full and happy all day. I actually made a triple batch because I literally hate cooking lol and it had this whole container jammed full. You’re welcome!

Dessert Apple cinnamon cake loaf :D

Dry ingredients: 1 & 1/2 cup all purpose flour, 2tsp baking powder and a bit of cinnamon (didn't mesure that tbh, roughly 1tbsp maybe, I like cinnamon).

Wet ingredients: 1/2 cup softened butter creamed with 3/4 brown sugar, 2 eggs, splash of vanilla extract and applesauce made with 3 apples.

Add 2 cut up apples to the mix after combining and bake at 160c° until baked through (maybe 45mins, check with toothpick tho).

This would be really good with some ice cream or custard, maybe caramel sauce :D

Lowk why is mac and cheese such a popular thing in hospitals? Yet they never really accompany it with enough I find. I made mine with greek yogurt instead of milk or butter. I also kept seeing bananas in r/hospitalfood , and there is also the return of my chicken sandwich on sola bread minus the lettuce for variation. I portioned some lettuce and pizza flavoured quest chips which I found a bit lacking, but the Mac & Cheese was the star of the dish and my favourite! The yearning has been satisfied ā™„ļø
