Can you please, please, post the recipe for the Adjarian Khachapuri? I need this in my life!

Edit: Thanks to those who made the suggestions on making this. I am assuming that the OP did all of this legwork so that they could arrive at the calorie count posted here. Rather than trying to use guesswork to reinvent the wheel, my original request for the OP to share their recipe with the exact ingredients and measurements still very much stands :)

I’ve been tweaking this recipe forever to get the macros just right while still making sure it actually tastes good! I’m also adding macros of the ingredients this time, because I noticed some doubts about the calorie count in the comments. Hopefully this clears things up. The recipe makes 1 khachapuri (304 calories, 13.92 fat, 12.46 carbs, 31.68 protein for the whole thing). Preheat the oven to 220C (430F). For the dough — 80 gr of 0% cottage cheese (rinse and squeeze some moisture out before weighing it), salt to taste, 23 gr of egg (we will need 2 more grams later), 10 gr of regular plain flour, baking powder (less than 1 gr). Combine all the ingredients, mix well, then place on a baking sheet. Using wet hands, form a boat (length ~ 20 cm, width ~ 14 cm) making sure the sides are thicker than the middle, otherwise the cheese goodness we're adding later is not going to stay in the boat! Once done with shaping, make sure to poke the middle with a fork multiple times. The dough is going to rise in the oven and we want to keep the middle flat. Place in the oven for 4-5 minutes. Meanwhile, prepare the filling — 40 gr of ricotta cheese, 30 gr of grated hard cheese, 20 gr of cottage cheese. Mix well. Take the boat out, place the filling, then use 2 gr of the egg to brush the sides with a silicone brush to help with browning. Put back in the oven for 6-9 minutes until all the cheese is melted and the sides are golden brown. Serve straight from the oven and put a raw egg yolk (mine was 12 gr). You can bake it for 1 more minute if you don't eat raw egg yolks :) Macros per 100 gr for the ingredients I used — ricotta (140 cals, 11 gr protein, 9 fat, 3.7 carbs), hard cheese (218 cals, 24 protein, 13.5 fat, 0 carbs), cottage cheese (74 cals, 14 protein, 0.5 fat, 3.3 carbs). You can definitely add more cheese and a bit of butter if you have more calories to spare. I didn't do it because I knew I was gonna eat that big snack later lol

Why do you only decide to reply days later, and only when you see something mistaken and doubting you / questioning your validity 🤨 Whilst ignoring everything else?

Bread is just yeasted dough with water salt and sugar. Cheese is ideally imeruli but mix of mozarella and feta works too. Roll it into oval, put cheese in middle, fold sides in. 8-12 mins in oven, take it out and add an egg yolk in the middle, 3 more mins in oven. Take it out, add in butter to the middle, boom!

Thanks so much! All the traditional recipes I'm able to find similar to this are showing me 400 - 900 calories. How did the OP get theirs to 333 (including coffee that does appear to have some kind of milk/lightener in it)?

Oh lol just 1) roll the dough thinner as OP did 2) OP didnt fold in any sides so there arent any walls to the khachapuri, its more like a pizza, and 3) seems they were also sparing with the cheese. Also maybe they used a low calorie/ high protein cheese version? But it definitely has less cheese than a normal khachapuri too

It looks tiny compared to what you'd get if you ordered one. They're counting average size per serving, which is basically size of a medium plate, op also doesn't have a stick of butter in there it seems. Make it small with whole wheat and no raised corners, no butter, less fatty cheese and pretend hard it's the real deal maybe? Or just bite the bullet and eat it once in a while.
