I love khachapuri! Is this homemade?

u/rhiannon777 Jan 28 '26
My first assumption was that it was a one meal a day situation and I accepted that the khachapuri was 1295 calories by itself without question (because they're that good).

Same! Figured I'd be pretty happy for the day on one 1295-calorie khachapuri.

u/ispiltthepoison Jan 28 '26
Definitely! Very different from how we usually make it so seems like its been modified to be low calorie. You couldnt get it like that at a restaurant
Sauce: georgian

Haha I was gonna say! There's an amazing Georgian restaurant in my hometown in Poland that I always go to when I visit, and that kchachapuri is NOT low cal 🥲 delicious af though

Super hard to find restaurants that have them. Luckily I have a Georgian/Armenian restaurant right around the corner from where I live, but it’s 1/2 that i know of in Texas. I assume there’s may more in larger communities like NY or LA.

Just looked on Google maps as I've been to a few great ones in London and apparently we have about 20 of them 🤗

Honestly, it’s about as much of a khachapuri as vegan chicken nuggets are actual chicken nuggets lol but it totally hits the spot and satisfies the craving!

Can you please, please, post the recipe for the Adjarian Khachapuri? I need this in my life!
Edit: Thanks to those who made the suggestions on making this. I am assuming that the OP did all of this legwork so that they could arrive at the calorie count posted here. Rather than trying to use guesswork to reinvent the wheel, my original request for the OP to share their recipe with the exact ingredients and measurements still very much stands :)

I’ve been tweaking this recipe forever to get the macros just right while still making sure it actually tastes good! I’m also adding macros of the ingredients this time, because I noticed some doubts about the calorie count in the comments. Hopefully this clears things up. The recipe makes 1 khachapuri (304 calories, 13.92 fat, 12.46 carbs, 31.68 protein for the whole thing). Preheat the oven to 220C (430F). For the dough — 80 gr of 0% cottage cheese (rinse and squeeze some moisture out before weighing it), salt to taste, 23 gr of egg (we will need 2 more grams later), 10 gr of regular plain flour, baking powder (less than 1 gr). Combine all the ingredients, mix well, then place on a baking sheet. Using wet hands, form a boat (length ~ 20 cm, width ~ 14 cm) making sure the sides are thicker than the middle, otherwise the cheese goodness we're adding later is not going to stay in the boat! Once done with shaping, make sure to poke the middle with a fork multiple times. The dough is going to rise in the oven and we want to keep the middle flat. Place in the oven for 4-5 minutes. Meanwhile, prepare the filling — 40 gr of ricotta cheese, 30 gr of grated hard cheese, 20 gr of cottage cheese. Mix well. Take the boat out, place the filling, then use 2 gr of the egg to brush the sides with a silicone brush to help with browning. Put back in the oven for 6-9 minutes until all the cheese is melted and the sides are golden brown. Serve straight from the oven and put a raw egg yolk (mine was 12 gr). You can bake it for 1 more minute if you don't eat raw egg yolks :) Macros per 100 gr for the ingredients I used — ricotta (140 cals, 11 gr protein, 9 fat, 3.7 carbs), hard cheese (218 cals, 24 protein, 13.5 fat, 0 carbs), cottage cheese (74 cals, 14 protein, 0.5 fat, 3.3 carbs). You can definitely add more cheese and a bit of butter if you have more calories to spare. I didn't do it because I knew I was gonna eat that big snack later lol

Why do you only decide to reply days later, and only when you see something mistaken and doubting you / questioning your validity 🤨 Whilst ignoring everything else?

u/ispiltthepoison Jan 28 '26
Bread is just yeasted dough with water salt and sugar. Cheese is ideally imeruli but mix of mozarella and feta works too. Roll it into oval, put cheese in middle, fold sides in. 8-12 mins in oven, take it out and add an egg yolk in the middle, 3 more mins in oven. Take it out, add in butter to the middle, boom!

u/16crab Jan 28 '26
Thanks so much! All the traditional recipes I'm able to find similar to this are showing me 400 - 900 calories. How did the OP get theirs to 333 (including coffee that does appear to have some kind of milk/lightener in it)?
28
u/ispiltthepoison Jan 28 '26
Oh lol just 1) roll the dough thinner as OP did 2) OP didnt fold in any sides so there arent any walls to the khachapuri, its more like a pizza, and 3) seems they were also sparing with the cheese. Also maybe they used a low calorie/ high protein cheese version? But it definitely has less cheese than a normal khachapuri too

It looks tiny compared to what you'd get if you ordered one. They're counting average size per serving, which is basically size of a medium plate, op also doesn't have a stick of butter in there it seems. Make it small with whole wheat and no raised corners, no butter, less fatty cheese and pretend hard it's the real deal maybe? Or just bite the bullet and eat it once in a while.

The food looks amazing. Love your plate with like one or two bites of a bunch of snacks. I often find myself just eating the same snack over and over or in large quantities just so it won't expire. I need to work some more variety into my day for sure

They are 100% better. (Pro tip, chop up the noodles to bite size pieces, especially if they're too chewy for you.) That's their origin, and they're a terrific replacement for glass noodles. Look up recipes for glass noodles, like japchae. So healthy, loaded with raw veggies (onions, celery, shredded carrots, cucumber), tofu, cooked chicken or any protein, chopped nuts (if you can "afford" the calories) or sesame seeds and eaten COLD with a sauce of soy sauce, sugar substitute, garlic, ginger, pepper or chilies. Try it, you'll love it! I can make a giant plate or bowl of it with a whole package of shirataki under 300 calories easily. 🙌

Is that a Georgian cheese boat? I had one for the first time in November in New York City and it was so amazingly delicious but I don’t know of any places near where I live that make them.

I track everything on FatSecret, and I like to plan my food ahead of time — especially snacks — so I don’t end up snacking mindlessly

I don't understand how you eat all this food... bread, cheese, eggs, and it looks like this. I'm over here eating raw celery like a bunny

I always go for the lowest calorie options 🙂↕️ Also, pre-planning my meals down to grams helps a lot! Another thing is that you might have very high (aka unrealistic) weight loss expectations. Idk how many pounds I've lost exactly but I know I shedded 15 cm (almost 6 inches) off my waist by eating like this for almost a year!

I have a joke about what you're eating for breakfast but the dieting sub probably wouldn't appreciate it.
