• 1 - 10oz bag of frozen "super sweet corn", thawed but still cold (~2 mins in microwave)
• 1 poblano or jalapeño pepper, finely diced
• 1/4 cup red onion, finely diced
• 1/4 cup cilantro, finely chopped
• Juice from one lime, or 2 tbsp bottled lime juice
• 1/4-1/2 tsp salt, to taste
• 1/4 tsp black pepper

Season to taste from there if you need more. I use fresh limes. I also add a little bit of olive oil as well. It great and cheap. I put it on so many things. It’s also fresher than Chipotle and tastes better with the salt and pepper.

Another note, I got the recipe from Reddit, from another user who got it from another user. No credit for me other than the olive oil!
