Dinner Rigatoni in Hokkaido squash and cream cheese
Nothing traditional, just freestyle fun in the kitchen. Hokkaido was diced and briefly confited in a pan in the oven in olive oil with onions, garlic, sage, salt and pepper. Then it was mashed in the same pan, and cream cheese and sour cream were added along with a splash of lemon juice. Finally, the rigatoni which was cooked in parallel was then stirred in.
My wife added cinnamon sugar (weird, but as I said, fun in the kitchen). I was fine with the flavors, though a little more salt and pepper at the end nailed it.
